How to use mold with chocolate.
Solid Flat-Bak Molding
- Spoon melted chocolate into each
of the cavities of the dry molds, if it overflows, scrape away the
excess with a straight knife or spatula.
- Lightly tap the mold on a counter
or a table to remove any air bubbles on the surface of the mold.
- Place mold in refrigerator for
a few minutes (usually 3 to 4 minutes) to set the chocolate.
- Once the wet appearance has disappeared
from both sides of the mold invert the mold and flex or tap the back
of the mold to release the candy from the mold.
- if pieces do not come out easily,
put the mold back under refrigeration for another minute or two.
"Painting" a Mold
- Using a paintbrush, paint the appropriate
coating on the inside sections of the mold.
- Carefully look at the front of the
mold to be sure that all appropriate areas are covered.
- Let color set before adding any
additional colors to prevent them from running into each other.
- Follow steps 1 - 5 of Solid Flat
- Back Molding.
Filled Shell Mold
- Fill cavity of the mold with coating.
Pour excess out into your bowl of chocolate and allow the mold to
set at room temperature for 3-5 minutes.
- Place desired filling in the mold
leaving 1/8" space at the top of the mold
- With a straight spatula or Knife,
lay melted chocolate on to the filling.
Scrap off excess.
- Follow steps 3 - 5 of Solid Flat
- Back Molding
Caring for your molds.
Wash with warm water and mild detergent or soap. (Never use hot
water or
/ou will damage the molds.) Towel dry. There's no need to wash the
molds between uses when they're used throughout the day; wash the
molds only when you're ready to store them. To avoid warping the
molds, store in a cool area away from heat.
How to work with compound coatings.
Things to Remember for Compound Coatings
- Working with chocolate works best
in ambient room temperature of
68°-75° degrees F.
- Avoid processing chocolate in high
humidity conditions, humidity levels below 50 are best.
- Compound Coatings need only to be
melted to a temperature of 90°-
92° degrees Fahrenheit.
- Compound Costings are oil based,
so never let water come in direct contact with them.
- If you are adding flavors, they
must be oil-based. Most extracts are water-based.
- Store in cool dry and odorless environment.
- Do not store in refrigerator or
freezer because condensation will form when removed. This will add
water to the Compound coating and will cause it to thicken when melted.
How to Melt Compound Coatings
Double Boiler Method
- Heat water in the bottom of the
double boiler - remove from heat before water boils You should be
able to touch the water without burning your hands.
- Place the top pot (or bowl), with
a small amount of Rainbow Coating, on the top of the pot with hot
water. The water should not come in direct contact with the compound
coating.
- Stir until melted; continue adding
compound coating until the desired amount of coating is melted.
Microwave Method The following is based on a 600
watt microwave. Microwaves generate extreme heat. Based on your
wattage, you must determine the proper heat setting for your microwave.
- For one Ib. of Rainbow Coating,
cook one minute on high. Stir.
- Continue cooking on medium in 15
second intervals, stirring each time, until the Rainbow compound coating
is fully melted.
- If working with many colors, use
canning or mayonnaise jars for each color Once melted, just place
in warm water bath during use. Put lid on for storage.
